Summer stone-fruit; Nectarines roasted with White Wine and Honey
A really easy, but really delicious summer dessert option.
Nectarines roasted with White Wine and Honey
Ingredients:
Serves 4
4 free stone nectarines about
1 cup white wine
2 tsp honey
1- 2 tbsp brown sugar
30g butter cut in small cubes
Method
Halve nectarines and place in a low sided ovenproof dish in which fruit fits “snuggly”
Carefully pour round wine
Place honey in each cavityCut butter in to 8 cubes and put a a cube in each cavity Sprinkle nectarines with brown sugar
Roast in a preheated oven approx 20 - 30 minutes until nectarines are soft and golden coloured
Serve with yoghurt or lightly whipped cream and a crisp biscuit for texture
Method:
Preheat the oven to 200degrees fan bake.
Halve nectarines and place in a low sided ovenproof dish in which fruit fits “snuggly”.
Carefully pour wine round the nectarines.
Place honey in each cavity.
Cut butter in to 8 cubes and put a a cube in each cavity.
Sprinkle nectarines with brown sugar.
Roast in a preheated oven approx 20 - 30 minutes until nectarines are soft and golden coloured
Serve with yoghurt or lightly whipped cream and a crisp biscuit for texture
Hint:
If nectarines are not free stone, wedge fruit as neatly as possible from the stone. You may need to use less wine and cook for a slightly shorter time.
Other stone fruits can be used in place of nectarines.
Also fruit can be cooked in a fry pan using basically the same ingredients. Sauté the fruit with the butter first, then add wine, sugar and honey and gently simmer until tender. Once fruit is cooked removed fruit from pan and boil juices rapidly to intensify the flavour
I have a friend who uses brandy instead of wine....Delicious!
